I hope everyone had a great Easter!
I can safely say this year's Easter celebration was my oddest yet. Not odd for a weird occurrence, but for its uniqueness. My mom has been fighting cancer again, so dinner was not going to be cooked or held at her house. We went out for dinner to a country club that had a brunch special. The odd part was that the only available reservation was at 3pm. A very early and odd time for dinner. Another weird part was that 3 of 5 siblings were at the their respective spouses parents houses for Easter. So, it was only 6 of us instead of the usual large group including my nieces and nephews.
As for the brunch, I have never had an omelet for Easter dinner before!

If your Peeps have been unwrapped since Easter today is the day to eat them. Peeps taste best when they are a little stale... three days is best!
